That is just a change on the GDoc right?  Back in the old days on OCN, I usually used an OCN themed blue for my Sheets.

 

Does the embed strip the formatting of the Google Sheet?

Well, that was easy... A bit stupid I didn't change that already, but now it's dark gray with red text. 

It's not so good looking that the sheet is stretched though, but I think that's not something I can fix.

Not sure that the Dark Theme can even accommodate alterations to embedded content as it is not inherently a site element.

Confirmed. You cannot alter the embed colour scheme. These changes would have to be made at source.
